tzatziki.
Tangy cucumber sauce. Originated somewhere in the ottoman empire. Pairs well with grilled meats
Ingredients:
1 cup Greek yogurt.
1/4 cup sour cream.
1 English cucumber.
2 cloves garlic, grated.
2 tbsp dill, chopped.
1 tbsp mint, chopped.
1 tbsp parsley, chopped.
1 lemon, juice and zest.
pinch cumin powder.
2 tbsp olive oil.
kosher salt.
Equipment:
box grater.
cheesecloth.
mixing bowl.
Yield:
~ less than 2 cups.
Execution:
Grate the cucumber over two layers of cheesecloth and add a small pinch of salt, wrap the cheese cloth into a ball around the cucumber and squeeze tightly to remove the cucumber juice, discard the juice.
Combine the squeezed cucumber with all of the ingredients and season to taste with lemon and salt.
