Tangy cucumber sauce. Originated somewhere in the ottoman empire. Pairs well with grilled meats

Ingredients:

  • 1 cup Greek yogurt.

  • 1/4 cup sour cream.

  • 1 English cucumber.

  • 2 cloves garlic, grated.

  • 2 tbsp dill, chopped.

  • 1 tbsp mint, chopped.

  • 1 tbsp parsley, chopped.

  • 1 lemon, juice and zest.

  • pinch cumin powder.

  • 2 tbsp olive oil.

  • kosher salt.

Equipment:

  • box grater.

  • cheesecloth.

  • mixing bowl.

Yield:

  • ~ less than 2 cups.

Execution:

  • Grate the cucumber over two layers of cheesecloth and add a small pinch of salt, wrap the cheese cloth into a ball around the cucumber and squeeze tightly to remove the cucumber juice, discard the juice.

  • Combine the squeezed cucumber with all of the ingredients and season to taste with lemon and salt.
