Execution:

  • Mash the onion, pepper and cilantro in a mortar & pestle/mojcajete until you form a coarse paste, then add the avacados and continue to mash.

  • Season to taste with lime and salt.

Ingredients:

  • 4 ripe hass avocados.

  • 1/2 small Spanish/Vidalia onion, small dice.

  • small bunch cilantro leaves.

  • juice and zest of 1 lime.

  • 1 serrano/jalapeno chili, chopped.

  • kosher salt.

Equipment:

  • an authentic molcajete or mortar & pestle, if you dont have one I would recommend hand chopping all of the ingredients and mixing it in a bowl.
