Whisk everything except the butter and oil together until homogenous.
Place slices of bread into the royale and let soak for 1 hour, flipping halfway through.

Preheat an oven to 350°F.
in a cast-iron skillet set over medium-low heat, add the butter and oil.
Once the butter melts and becomes lightly foamy, add your toast and increase the heat to medium.
Let cook until golden brown and flip.
Cut the heat, place the pan into the oven and let cook for another 5 minutes or until the bottom side is golden brown as well.
Serve with maple syrup, fresh fruit, whipped cream, icing sugar etc.)

250g 35% cream.
30g (2 tbsp) sugar.
3g (1 tsp) cinnamon.
5g (1 tsp) brandy, whiskey or rum.
1 egg.
1 egg yolk.
pinch grated nutmeg.
pinch kosher salt.
2 tbsp butter.
1 tbsp neutral oil.
